In any kitchen exhaust hood is the unit which removes the unnecessary fumes, smoke, odours, heat, and steam to maintain the desired environment, but if this unit is not functioning properly; it becomes difficult for any person to work in such unpleasant environment.

Commercial vent hoods may also be combined with a fresh air fan that draws in exterior air, circulating it with the cooking fumes, which are then drawn out by the hood. In most exhaust hoods, a filtration system removes grease (the grease trap) and other particles.

But if the system is not installed or designed properly, smoke will not leave the kitchen. This smoke will not allow chef to work and also this smoke & smell will travel to seating area; which will create very uncomfortable and annoying conditions and may lead to problems.
